This is the story of 'Harriseh Keopi'

The Semolina Cake was in existence during the Ottoman Empire. It is doused with simple syrup and served with tea or coffee. It is an infamous dessert in the Middle East countries and is known by various names; Namoura (Lebanese), Basbousa (Egypt) and Harriseh (Palestine).

When I was trying to name the cake, I was flooded by the images of the atrocities against humanity in Palestine. I decided to name the cake after the Palestinian version.

Our version of the cake is doused with our coffee infused syrup. 

I am not a wordsmith but this dessert best capture the vision KEOPI MADRE hopes to achieve. "To power forth regardless the circumstances". Palestinians have displayed strength and unwavering faith for the Creator. To witness that has been both humbling and empowering. 

This dessert is dedicated to the Indefatigable Souls. The spirit of Persistence in all sense.
